A more efficient practical education (training) in the field of catering and tourism

In Slovenia, school restaurants and school hotels have been established for the needs of more efficient practical education (training) in the field of catering and tourism. The most recognizable among them are School hotel Astoria (VGS Bled), Restaurant Kult 316 (BIC Ljubljana) and Restaurant Sedem (VSGT Maribor).

Restaurant Sedem is a professional and business incubator of the Vocational College of Hospitality and Tourism Maribor, which is actively involved in the model of practical training of VSGT students.

Restaurant Seven operates on the basis of an innovative business model, where students carry out all work processes in an open-type restaurant under the watchful eyes of the mentors. The excellence of the business is confirmed by numerous awards and high ratings of the restaurant in various culinary guides (Michelin, Gault & Millau, The Slovenia Restaurants Awards).

The aim of the Restaurant Sedem is to actively train staff, which will be a key creative and sustainable professional generator of the future, through its activities. In doing so, it is essential to strive towards implementation of a high-quality catering service, which consists of a mix of tangible and intangible elements and the given environment. The inclusion of exclusive local produce, dishes, and handicrafts of the destination brand KBZ – Naše najboljše (collective brand Our Best) brings Restaurant Seven a range of new opportunities to creatively upgrade the offer, clearly identify the mission, influence socially responsible business practices and more successful communication and marketing. The added value of the Restaurant Sedem for the development of efficient staff is also in the fact that all mentors come from the ranks of VSGT Maribor alumni, which has a decisive influence on their affiliation and commitment to a common business philosophy.

With the equally dispersed target groups of Restaurant Sedem, which mainly include business guests and lovers of more demanding cuisine (fine dining), Sedem managed to achieve excellent positioning in culinary guides and was awarded with 2 consecutive Michelin plates; 2020 and 2021. It is the only school restaurant in the world with this recognition and among top 53 restaurants in Slovenia. This represents a new milestone in positioning the restaurant on the market, while at the same time giving further recognition to its founder, Vocational College of Hospitality and Tourism Maribor and the hospitality profession.
